Delicious recipes Muffins – Corn and Apricot Muffins with Orange Essence
In this episode of Running The Kitchen, I am going to focus on breakfast. My two favorite breakfast foods are omelets and muffins, so today I am going to combine the two to make omelets and bake them in muffin trays. My omelets are going to include pepper jack cheese, spinach, tomatoes, and egg whites. These are delicious breakfast treats that you can make and store in your fridge for a quick breakfast on the go! The omelet contains a lot of protein from the egg whites which will help to keep you full so you don’t over eat later in the day, give you energy, and they taste great!
